Omelette Pans

The advice found in an old book is that omelette pans should never be immersed in water! When new, fill with salt put over a low heat until it becomes very hot, shake and empty, then put some butter in, heat till brown and work over entire pan to protect the surface and wipe with some kitchen roll. Apparently this treatment renders a steel pan non stick provided no water is allowed to spoil the pan.
