Cajun Chicken Wings by TABASCO
Wonderful rich and vibrant sticky coated chicken wings.

450g/1lb chicken wings
200ml/7floz dry white wine
1 tbsp Tabasco® Pepper Sauce
1 onion, peeled and finely chopped
1 clove garlic, peeled and crushed
75g/3oz dark brown sugar
1 red chilli, seeded and chopped
1 heaped tsp paprika
1 tbsp tomato puree
Salt and freshly ground black pepper
1 tbsp freshly ripped coriander leave
extra Tabasco® for serving

Cut wing tips from wings and discard. Halve remainder at the joint to give two pieces per wing. Place in a bowl. Pour over white wine and Tabasco® Pepper Sauce and leave for 30 minutes.
Transfer to a roasting dish with a slotted spoon. Add onion, garlic, sugar,chilli, and paprika and tomato puree to wine mix and stir. Season.
Pour over wings. Bake in a pre-heated oven Gas 5 375F 190C for 30 minutes, covered with foil. Remove foil and continue cooking, turning wings over occasionally, until sauce is reduced to a sticky, aromatic coating. Scatter over coriander and serve sprinkled with extra Tabasco®.
