Ingredients

Main Ingredients
 2 Lowther Organic Chicken Breast
 1 tblsp Toasted Sesame Seeds
 1 Large Chilli finely chopped
 1 tblsp Fresh Coriander chopped
 1 clove Garlic crushed
 1 tblsp Soy Sauce
 1 tblsp Peanut Oil
 1 tblsp runny honey
 1 Lime - juice & zest

Base Ingredients
 100g Pad Thai noodles
 1 tsp sesame oil
 1 tblsp Soy Oil
 1 tblsp Peanut Oil
 1/2 cucumber thinly sliced
 2 spring onions finely chopped
 1/2 red onion finely sliced
 4 radishes sliced
 1 Lime -juice of
 1 tsp sugar
 1 cup fresh coriander
 1 cup fresh basil

Method


Pre-heat the oven to 200*c (gas 6).

Place all the ingredients except the chicken into a bowl and mix well to form a paste. Add the chicken and leave to marinade for 10-15 minutes.

In a separate bowl cover the noodles in boiling water, leave to soak for 5 minutes then drain and cool.

Pop the chicken onto a tray, tip any excess marinade over the chicken and cook in the oven for 18-20 minutes turning half way through.

To make the salad, combine the sesame oil, peanut oil, sugar, lime and soy sauce, gently whisk then add the noodles, spring onions and red onions, mixing well before dividing between the plates.

Top each salad with cucumber, radish and sliced aromatic chicken.
