A great way to eat rocket in a different way or use up any you’ve got leftover.

Main Ingredients
 1 packet Steve’s Leaves Wasabi Rocket and Other Fab leaves or other strong tasting rocket leaves
 2 rump steaks
 250g soba noodles (If you can’t find soba use udon or rice noodles)
 100g sugar snap peas
 4 spring onions, finely sliced
 1 red chilli, finely sliced
 1 ½ limes
 2 tsp fish sauce
 1 tsp brown sugar
 3 tbsp vegetable oil
 2 generous handfuls roasted salted peanuts

Steve’s Leaves has a magnificent mix of wasabi rocket and other fab leaves – this fiery rocket gets hotter as you eat it and the stunning cooler leaves of red spinach, mizuna and green spinach brighten up any food lover’s plate. Naturally rich in folic acid + vitamin A.

Slice the rump steak into 5mm thin pieces across the grain of the meat.

Place in a bowl with the chilli and the juice of ½ a lime. Leave to marinade for at least 10 minutes.

Combine the juice of 1 lime with the fish sauce, sugar and 2 tbsp oil for the dressing.

Bring a saucepan of water to the boil ready for the noodles.

Top, tail and slice the sugar snap peas in half. Place on serving bowl with rocket leaves spring onion.

Cook the noodles according to instructions on the back of the pack then drain.

Toss in half of the dressing to coat the noodles.

Heat 1 tbsp oil in a wok or frying pan until smoking hot, then add the beef.

Stir fry for 2 -3 mins pouring off any juices that appear after a minute or so to keep the pan dry.

Toss the leaves in the remaining dressing then add the noodles and beef.

Sprinkle over the peanuts and serve.
